This local honey from Tasman Honey is a by-product of the wax melting process so has been heated and is very dark in colour with a caramelised flavour.
It is similar to molasses in texture and is best used for distilling.
Makes a fantastic alternative Rum or Whiskey style spirit when using a pot still
Could also be used in cooking.
